Ingredients:

  • 4 peaches, pitted, small diced
  • 2 Tbsp. jalapeño peppers, minced
  • 2 Tbsp. red onions, minced
  • 1/2 tsp. Kosher salt
  • 1 Tbsp. canola oil
  • 1 Tbsp. lime juice
  • 1 Tbsp. cilantro, chopped
  • 1/2 lb. cooked shrimp, chopped
  • French bread crostinis

Directions:

  • Add all ingredients to a large bowl and mix well.
  • Let marinate ten minutes before serving.
  • Spoon one tablespoon per crostini
