carrot top pesto

Ingredients:

  • 2 cloves of garlic, minced or put through a garlic press
  • 1 bunch carrot tops, about 2 cups chopped (from 6 to 8 carrots)
  • 1 cup grated parmesan cheese
  • 1/2 cup sliced almonds
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. honey
  • 1/2 tsp. kosher salt
  • 1/2 tsp. white pepper
  • 1 cup olive oil

 

Directions:

  • Put all the ingredients, except olive oil, in a food processor or blender and process until very smooth
  • With the blender running, slowly add the olive oil in a steady stream until well combined
  • If using table salt, use half the amount, as kosher salt weighs twice as much as table salt
