Ever wanted to create your own pasta? Well here is a simple recipe to get you started on your pasta making journey! Follow this recipe to make the dough that is needed to create pasta:

Ingredients:
180 Grams (I cup) Semolina Flour*
180 Grams (1 cup) Type 00 Flour*
178 Grams (¾ cup) of Warm Water

 Combine Semolina and Type 00 in the bowl of a food processor and pulse to combine.  With the food processor running at water gradually.  Once all the water is added pulse the dough until a cohesive ball forms.

Remove the dough from the food processor and transfer to a lightly floured work surface.  Knead the the dough by hand for 4 to 6 minutes, adding additional Type 00 flour if the dough is to sticky.  The dough should feel fairly smooth and springy at the end of the kneading.

Rest the dough wrapped in plastic wrap or under an overturned bowl for at least 20 minutes before shaping.

(Note:  Traditionally of course, the food processor is not a part of the pasta making process.  Usually the two flours are combined on the counter, and a well is made in the center of the mound of flour and water is added gradually and mixed with a fork until a cohesive dough is formed.  The process of hand mixing can also happen in a large bowl, and then move to the counter for kneading).

*Semolina flour is available locally at Deep Roots and Whole Foods
**Type 00 flour is available locally at Harris Teeters, Giacomo’s’ Italian Deli, and the Jerusalem Market (not downtown location).  All Purpose Flour can be substituted, but there’s a marked improvement in texture with the finer grind Type 00.
