Fresh Field Peas
Ingredients:
- 2 slices bacon, cut into ½-inch pieces (alternate cooking fat options: 1-2 Tbsp ghee, coconut oil or olive oil)
- 1 small yellow onion, chopped
- 1-2 cloves of garlic, minced
- 2 cups broth (chicken, beef, vegetable or bone all work well)
- 3 cups shelled fresh field peas
- 2 cups water
- 4 or 5 baby okra pods
- 1 fresh hot pepper or 1/2 tsp hot pepper flakes (optional)
- Salt and pepper

In a large skillet, fry the bacon over medium-high heat until it begins to brown. If using ghee or oil alone, simply heat until drop of water sizzles in pan, Add the onion and cook, stirring often, for about 5 minutes, until soft. Add the broth, stir, and remove from the heat.

Pick through peas, rinse, and add to onion and broth pot. Add water, okra, hot pepper, and the broth mixture, bring to a simmer over medium heat, and cook for 30 minutes or until the peas are tender. Season with salt and pepper. Serve hot with greens and cornbread. ***don’t forget to drink the pot liquor, or bean broth, which contains essential vitamins and minerals to boost your immunity!
