Recently at a GFCM marketing meeting Carol Pryor of Birch Fork Farm brought marinated tomatoes that were so good we all had seconds and thirds. She was kind enough to share this simple seasonal recipe with us. If you’re at the market stop by her booth and ask about her infused vinegars. They are a creative and tasty way to add a depth of flavor to any dish.

Marinated Tomatoes
Slice three good sized tomatoes in a shallow dish and set aside.

Combine the following in a jar so you can shake them all together and pour over the tomatoes.

1/4 cup white balsamic vinegar
1/4 tsp freshly ground black pepper
1 Tbsp chopped parsley (or a heaping tsp of dried)
2 Tbsp chopped sweet onion
1/3 cup extra virgin olive oil
1 tsp salt
1 clove garlic minced
1 Tbsp or more chopped basil, to taste
1/2 tsp dry mustard.

Let sit at room temperature at least an hour.  ENJOY.
