Cesar Salad
Ingredients:
1 large head of 2 small heads romaine lettuce
1 garlic clove
5 tablespoons olive oil
1 teaspoon Grey Poupon country dijon mustard
3 tablespoons fresh lemon juice
1 egg yolk
1 tablespoon Parmesan cheese, plus another
1 cup seasoned croutons
1 tin flat anchovies (no capers), made into paste (optional)
Directions:
This recipe works best in a wooden salad bowl. Cut garlic clove in half lengthwise and rub bowl. Add olive oil, mustard, lemon, egg and cheese (add anchovies here if using). Mix and swirl around bowl.
Add bite sized pieces of lettuce and croutons. Sprinkle with cheese. Toss and serve.
NC Shrimp and Vegetable Pasta
Ingredients:
1 lb campanella pasta
1 pint small multicolored cherry tomatoes
6 small multicolored sweet peppers, cut in bite sized pieces
2 large banana peppers, diced
10 leaves basil, finely chopped
1/3 cup olive oil
3-4 cloves garlic, minced
2 pounds fresh shrimp, with shell and tail (can use chicken as substitute)
Asiago cheese to taste
Salt, oregano and jerk seasoning to taste
Directions:
Place olive oil, garlic and basil in large bowl early in day.
Cook shrimp (see below)
1-2 hours before serving, add shrimp, tomatoes and peppers to oil mixture.
Cook pasta according to directions and drain, allow to cool. Add to bowl.
Add more olive oil, cheese and spices to taste.
Grilled Shrimp
Ingredients:
2 pounds fresh, NC shrimp with shell and tail on
2 tablespoons olive oil
1/8 cup melted butter
Juice of 1 lemon
2 tablespoons Grey Poupon country dijon mustard
1/3 cup fresh basil, minced
2 garlic cloves, minced
2 tablespoons grated cheese of choice
10 bamboo skewers
Directions:
Soak skewers in warm water for at least 1 hour.
Peel and shell shrimp.
In shallow bowl, mix together olive oil, butter, lemon juice, mustard, basil and garlic.
Add shrimp and toss to coat.
Cover and chill at least 1 hour.
Preheat grill to high. Remove shrimp from marinade and thread onto skewers. Discard marinade.
Spray grill with nonstick spray or oil. Grill shrimp on high for 2 minutes, turn and grill for 2 additional minutes.
