Homemade Breakfast Sausage for Patties
Ingredients:
1 pound of unseasoned ground pork
1 tsp salt
1 tsp ground black pepper
2 generous TBSP of finely chopped fresh sage or 1 generous tsp dried sage
1 fresh cayenne pepper, finely chopped with seeds or 1/2 tsp ground cayenne
Directions:
(NOTE: proportions above are to taste, feel free to adjust any of these to your personal preferences)
Combine all of the above in a bowl, using your hands to mix. COmbine as if you were kneading bread to keep the fat properly distributed.
Shape into patties and cook in skillet until done. Can also be shaped into patties and frozen or used in any recipe calling for bulk breakfast sausage.
Homemade Spanish Style Chorizo
Ingredients:
1 pound unseasoned ground pork
1 tsp salt
1 tsp ground black pepper
1 garlic clove, minced
1 1/2 tsp sweet paprika (pimenton)
1 tsp hot paprika (pimenton)
2 TBSP red wine
1/2 fresh cayenne pepper, finely chopped with seeds or scant 1/4 tsp ground cayenne
Directions:
(NOTE: proportions above are to taste, feel free to adjust any of these to your personal preferences)
Combine all of the above in a bowl, using your hands to mix. COmbine as if you were kneading bread to keep the fat properly distributed.
Use in recipes calling for loose chorizo sausage, including chili, omelets, or tacos to name a few.
