Ingredients:

3 Tbsp. sherry vin
6 Tbsp. olive oil
1 Tbsp. turbinado sugar
Pinch of ground black pepper
Pinch of Kosher salt
4 peaches, pitted, wedge
1/2 red onion, julienne
1/2 cup basil, chiffonade
1 cup cherry tomatoes, halved
1/2 lb. cornbread, sliced & grilled

Directions:

  • Whisk together first five ingredients in a large bowl.
  • Add peaches, onions, basil, tomatoes and cornbread.
  • Toss and allow to rest five minutes
  • Toss again and serve.
