Ingredients:
- Olive oil
- 1 cup plain grits
- 3-4 cups water
- ½ cup goat cheese
- 1 cup chopped mushrooms (shiitake work great!)
- 2-3 cups chopped greens (collards, spinach or mustard greens work great!)
- 2 garlic cloves
- ½ cup diced yellow onions
Steps:
- Boil water add grits, stir constantly. Cook until thick (about 10-15min)
- Once fully cooked, stir in ½ cup goat cheese until fully incorporated. Set aside
- While grits are cooking, use separate pan to sauté onion, garlic and mushrooms in olive oil. Once onion is clear, add greens and cook until soft (about 10 min)
- Place grits on pan and top with greens
- Enjoy!
**optional add-ons: fried egg, diced tomatoes, bell peppers, shrimp, diced beets, fermented veggies or kimchi
