Ingredients:

  • Olive oil
  • 1 cup plain grits
  • 3-4 cups water
  • ½ cup goat cheese
  • 1 cup chopped mushrooms (shiitake work great!)
  • 2-3 cups chopped greens (collards, spinach or mustard greens work great!)
  • 2 garlic cloves
  • ½ cup diced yellow onions

Steps:

  1. Boil water add grits, stir constantly. Cook until thick (about 10-15min)
  2. Once fully cooked, stir in ½ cup goat cheese until fully incorporated. Set aside
  3. While grits are cooking, use separate pan to sauté onion, garlic and mushrooms in olive oil. Once onion is clear, add greens and cook until soft (about 10 min)
  4. Place grits on pan and top with greens
  5. Enjoy!

**optional add-ons: fried egg, diced tomatoes, bell peppers, shrimp, diced beets, fermented veggies or kimchi
