Ingredients:

  • 3 peaches
  • 2 Tablespoons granulated sugar
  • 1 cup whipping cream (amount can be adjusted based on desired consistency of ice cream)
  • ½ teaspoon vanilla extract

Directions:

  • Approximately 4 hours before you want to make the ice cream, wash, dry and peel the peaches. Cut the peaches into thin slices and place them in a single layer on a cookie sheet covered with wax paper. Cover the peach slices with another sheet of wax paper and place the cookie sheet with the peaches in the freezer. Allow the peaches to freeze for approximately 4 hours.
  • To prepare the ice cream, place the frozen peaches in the bowl of a food processor. Sprinkle with the sugar and process until the peaches are finely chopped. With the food processor running, slowly add the whipping cream to the finely chopped peaches until the consistency is smooth and “looks like ice cream”. Add the vanilla and pulse 3- 4 times to blend with the other ingredients. Serve immediately.
  • Note: This ice cream can be made in advance and stored in an air-tight container in the freezer for up to one week.
