Ingredients:

  • 3 yellow squash (approximately ¾ pound)
  • 2 Tablespoons extra virgin olive oil
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon coarse ground black pepper
  • 1 Tablespoon dried oregano
  • 1 Tablespoon dried, minced onion

Directions:

  • 1) Blend the olive oil, salt, pepper, dried oregano and minced onion in a medium bowl.
  • 2) Wash and dry the squash. Cut the squash into half-inch cubes. Add the squash cubes to the olive oil/herb marinade and use a spatula to coat the squash with the marinade.
  • 3) Warm a 10-inch skillet over medium heat. Add the marinated squash to the skillet and sauté until squash begins to brown slightly and is fork-tender, approximately 8 minutes.
